140 g/5 oz brown rice

30 g/1 oz butter or 2 tbsp olive oil

1 onion, finely diced

110 g/4 oz fresh mushrooms (button, flat or wild), finely sliced

2 garlic cloves, finely chopped

2 tbsp finely chopped parsley

finely grated rind of 1 lemon

juice of lemon

salt and freshly ground black pepper

1 Place the rice and a teaspoon of salt in a saucepan. Cover with twice the volume of cold water and cover with a lid. Bring to the boil then gently simmer for 20-30 minutes, or until the rice is tender.
